Lettuce sprinkled on top of pasta? Sounds weird, right... but it works and it's delicious! This is the perfect middle of the work week dinner! Inexpensive (only about $15), easy to make, only dirties 2 pots, feeds at least 6, and is packed with flavor!
1-1/2 – 2 lbs Ground Beef
1 Green Bell Pepper
1 Medium Onion
1 Can of Diced Tomatoes w/ jalapenos
1 Small Can of Tomato Sauce
2 Tablespoons Tomato Paste
2 Cloves garlic, minced
2 Packs of Taco Seasoning
1 box Rotini Pasta
½ Head of Iceberg Lettuce, shredded or thinly sliced
1 Bag Shredded Mexican Mix or Taco Mix Cheese
In a large skillet brown ground beef and drain grease. Add the packs of taco seasoning and tomato sauce, paste and stir. Add green peppers, onion, garlic and tomatoes (drained). Stir and let simmer for 10 mins or until veggies soften. While simmering, boil water for pasta, and cook per directions on box. Once pasta is drained, return pasta to same pot and add ground beef mixture. Stir to coat pasta. Shred or slice really thin, the iceberg lettuce. Serve topped with a sprinkle of cheese and lettuce.
